Ingredients
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 (12-ounce) bags mixed vegetables (peas, carrots, corn, & green beans)
- 1 1/2 pounds chicken thighs or breasts, cubed
- 4 cups cooked white rice
- 3 tablespoons curry powder, more or less to taste
- 1 bunch green onions, sliced
- 1 bunch cilantro, chopped
- Vegetable oil, for the griddle
- Salt and pepper, to taste
Directions
- Preheat Blackstone griddle to medium heat. Drizzle with vegetable oil then add the cubed chicken. Season with salt and pepper. On another side of the griddle, throw down the mixed vegetables, bell pepper, and onion.
- Cook the chicken for 7-9 minutes or until completely cooked. Stir the vegetables and cook until lightly seared and tender. Add the rice and flatten it out onto the griddle.
- Once the rice is crispy and fully heated, use your spatulas to mix the vegetables, chicken, and rice. Sprinkle the green onions, cilantro, and curry powder over the mix. Stir with spatulas and cook for an additional minute.
- Remove the rice from the griddle and serve immediately.
