These Tuna Melts are a delicious twist on a classic. Featuring a zesty tuna mix with pickled jalapenos, green onions, and melted Swiss cheese, all sandwiched between crispy sourdough slices with a touch of spicy mustard, they’re the perfect savory melt for any meal.

Ingredients
- 2 (12-ounce) cans chunk tuna, drained
- 12 slices Swiss cheese
- 1/3 cup mayonnaise
- 1 (12-ounce) can pickled carrots and jalapeno slices, drained and chopped
- 12 slices sourdough bread
- 1 bunch green onions, sliced
- 2 tablespoons spicy brown mustard
- Salt and pepper, to taste
- Vegetable oil for the griddle
Directions
Combine the tuna, green onions, pickled jalapenos, and mayonnaise in a medium mixing bowl. Season to taste with salt and pepper then set aside.
Preheat a griddle to medium heat. Drizzle a small amount of vegetable oil onto the griddle, then place the slices of bread on it.
Divide the tuna mixture into 6 equal portions and place them onto the griddle. Cook for 4-5 minutes until heated through.
Top each portion of tuna with 2 slices of Swiss cheese and cover the griddle for 1 minute until the cheese is melted. While the cheese is melting, lay out the bread onto the griddle to toast.
Once the bread is toasted, remove it from the griddle and spread the mustard onto one side of each slice.
Use spatulas to set the tuna in between 2 slices of toasted bread. Serve hot.
