Melt 3 tablespoons of butter on the griddle. Add the diced apples and spread them out evenly. Season the apples with 1–2 teaspoons of kosher salt. Cook for 3–5 minutes, stirring occasionally, until softened but not mushy. Sprinkle the brown sugar over the apples and stir. Cook until the sugar melts and combines with the apple juices to create a caramel-like sauce. Add cinnamon, if using, and stir to combine. Add an additional tablespoon of butter if needed. Drizzle in 2 tablespoons of caramel sauce, mix well, then remove the apples from the griddle and set aside. Melt the remaining butter on the griddle. Add the oats, brown sugar, and a pinch of salt. Stir and toast until golden brown and fragrant, about 2–3 minutes. Spoon the apple mixture into small dessert cups or over graham crackers. Top with the toasted oat crumble and finish with an extra drizzle of caramel sauce. Serve warm.
