Begin by making the cream mixture. In the bowl of a stand mixer, combine the Dream Whip packet and cold milk. Whip until the mixture thickens, which should take about 1-2 minutes.
Add the sugar, cream cheese, and vanilla to the thickened Dream Whip mixture. Continue mixing until everything is well incorporated and the mixture has thickened further. This should take another 1-2 minutes. Place the mixture in the refrigerator for later use.
Prepare the apples by cutting them into circular slices. Use a small cookie cutter to remove the cores from the apple slices. In a separate bowl, toss the apple slices with lemon juice, brown sugar, cinnamon, and a pinch of salt. Set aside.
Preheat a Blackstone griddle on low heat.
Roll out the puff pastry and cut it into larger circles than the apple slices.
Melt butter on the preheated griddle. Place the apple slices and puff pastry circles on the griddle to cook.
Flip each piece every 2 minutes. Note that the puff pastry will cook faster than the apples. Remove them from the griddle when the puff pastry is golden brown and the apples are cooked to your preference.
Retrieve the cream mixture from the refrigerator and spread a layer on top of each puff pastry circle. Place an apple slice on top of the cream mixture. If desired, sprinkle additional cinnamon and sugar on top or use a pre-made dessert rub.
