Bacon & Gravy Loaded Tater Tots

Ingredients
- 1 lb bacon, chopped
- 4 tbsp all-purpose flour
- 2 cups heavy whipping cream
- 1 cup milk
- Salt and pepper, to taste
- 1 bag frozen tater tots
- 4–6 eggs
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ¼ cup green onions, chopped
Directions
Place a shallow pan on one side of the griddle over high heat. Add the chopped bacon and allow it to cook slowly so the fat renders properly. Once the bacon is crispy, reduce the heat slightly and slowly whisk in the flour. Let it cook for 1 to 2 minutes. Gradually whisk in the heavy whipping cream and milk, continuing to stir as the gravy thickens. Season with salt and pepper to your liking.
- While the gravy is cooking, move to the other side of the griddle and begin cooking the frozen tater tots. Add a small amount of oil and keep the heat low at first. Gradually increase the heat while tossing the tots occasionally until they become golden and crispy.
Cook the eggs according to your preference.
- To assemble, place a generous portion of crispy tater tots on a plate. Spoon the rich bacon gravy over the top. Add the cooked eggs, sprinkle with shredded cheese, and finish with a handful of chopped green onions.
