Bacon Jalapeno Corn Fritters

Ingredients:
4 strips thick cut bacon
¾ cup all purpose flour
¾ cup cornmeal
1 ½ teaspoons baking powder
½ tablespoon smoked paprika
1 red jalapeno pepper, minced
The juice of 1 lime
1 cup whole milk
2 fresh ears of corn, kernels removed
Sauce Ingredients:
1/3 cup mayonnaise
1/3 cup sour cream
The juice of 1 lime
2 teaspoons smoked paprika
2 tablespoons chopped cilantro
Salt and pepper
Directions:
- Cook the bacon well done on your griddle at medium heat.
- In a large mixing bowl, add the flour, cornmeal, baking powder, smoked paprika, jalapeno, lime juice, milk, and corn with a pinch of salt and pepper. Mix evenly to incorporate all ingredients.
- Once the bacon is finished, chop it small and add it to the batter. Mix evenly to incorporate everything evenly.
- Using a spoon, make small rounds or ovals with the batter and cook in the bacon fat for 3 minutes per side or until the fritters are crisp and golden.
- In a small mixing bowl, add all of the sauce ingredients and mix evenly.
- To plate, slice the fritters and serve with the sauce.
