Bacon Jalapeno Corn Fritters

Ingredients:

4 strips thick cut bacon

¾ cup all purpose flour

¾ cup cornmeal

1 ½ teaspoons baking powder

½ tablespoon smoked paprika

1 red jalapeno pepper, minced

The juice of 1 lime

1 cup whole milk

2 fresh ears of corn, kernels removed

 

Sauce Ingredients:

1/3 cup mayonnaise

1/3 cup sour cream

The juice of 1 lime

2 teaspoons smoked paprika

2 tablespoons chopped cilantro

Salt and pepper

 

Directions:

  1. Cook the bacon well done on your griddle at medium heat.
  2. In a large mixing bowl, add the flour, cornmeal, baking powder, smoked paprika, jalapeno, lime juice, milk, and corn with a pinch of salt and pepper. Mix evenly to incorporate all ingredients.
  3. Once the bacon is finished, chop it small and add it to the batter. Mix evenly to incorporate everything evenly.
  4. Using a spoon, make small rounds or ovals with the batter and cook in the bacon fat for 3 minutes per side or until the fritters are crisp and golden.
  5. In a small mixing bowl, add all of the sauce ingredients and mix evenly.
  6. To plate, slice the fritters and serve with the sauce.
