Bacon Jalapeño Popper Burger

Ingredients
- 2 pounds 80/20 ground beef
- 1 pound bacon
- 8 ounces cream cheese
- 8 ounces shredded cheddar cheese
- 2 jalapenos, diced
- ¼ cup Tapatio hot sauce
- 2 teaspoons horseradish
- 1 red onion, sliced
- 2 large tomatoes, sliced
- Iceberg lettuce, optional
- 8 hamburger buns, toasted on the griddle
- Kosher salt and fresh cracked black pepper
Directions
- Preheat your griddle to medium high. While griddle is heating, form the ground beef into 8 (4-ounce) patties.
- Lay bacon out on the griddle. Lightly season with pepper and drizzle a drizzle of Tapatio to taste.
- When the bacon is done, pull from griddle and chop into small pieces. Leave the bacon grease on the griddle, you will be using this to cook the jalapenos and burgers.
- Add jalapenos and sauté on the griddle for 3-5 minutes or until peppers are soft and lightly browned.
- In a large bowl, mix cream cheese, shredded cheddar, cooked jalapenos, diced bacon, 1 tablespoon Tapatio, and horseradish.
- Place the burger patties on the griddle and season with salt and pepper.
- Flip your burger when one side is browned. Then top each burger with the jalapeno-cheese mixture.
- Cover burgers with a basting dome until the cheese mixture is melted.
- Serve your burgers with tomato and onion slices (lettuce optional).
