Preheat your pellet grill to 300°F, using the wood pellets of your choice.
Cut a slit down the middle of each chicken breast to create a pocket, being careful not to cut all the way through. Season both sides of each breast with salt, pepper, and garlic powder.
Stuff each pocket with shredded queso quesadilla cheese and chopped green chiles.
Wrap each chicken breast with bacon, securing the filling inside.
Place the bacon-wrapped chicken on the top rack of the grill.
When the chicken’s internal temperature reaches 150°F, brush each piece with BBQ sauce.
Continue cooking until the internal temperature reaches 165°F.
Remove from the grill, sprinkle with chopped cilantro, and serve.
