Wrap each Oreo cookie with one rasher of bacon, securing the ends as you go.
Add the butter to the griddle and spread it evenly across the cooking surface.
Place the wrapped Oreos on the griddle with the seam side down to help seal the bacon and prevent it from unwrapping.
Cook the remaining bacon rashers on the griddle until crispy; set aside for garnish.
Cook the wrapped Oreos, turning occasionally, until the bacon is fully cooked and crispy and the cookies have softened. Lightly press on them to check doneness.
Remove from the griddle and place on a serving platter. Chop the reserved bacon and sprinkle over the top.
Season with your chosen rub before or during cooking. Mix in some spicy rub on a few for a fun “roulette” twist if desired.
Serve warm and enjoy the sweet, salty (and possibly spicy) combination.
