Ingredients
- 2 large chicken breasts, cut into 1–2 inch pieces
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 1 tablespoon Blackstone all-purpose seasoning
- 2 tablespoons oyster sauce
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- ½ teaspoon black pepper
- ½ teaspoon salt (light — soy and oyster sauce add salt too)
- Wooden or metal skewers
- 4 tablespoons melted butter (half a stick)
- 2 tablespoons chopped fresh parsley
- 1 cup mayonnaise
- 6 tablespoons sweet chili sauce
- 3–4 tablespoons Sriracha (adjust depending on spice preference)

- In a large bowl, combine the chicken with olive oil, garlic powder, paprika, all-purpose seasoning, oyster sauce, soy sauce, brown sugar, black pepper, and a little salt. Mix well to coat evenly and let marinate for 15–30 minutes.
- Thread the marinated chicken pieces onto skewers, leaving a bit of space between each piece for even cooking.
- Preheat the air fryer to 375°F (190°C) for about 3 minutes.
- Place the skewers in the air fryer basket without overcrowding. Cook at 375°F for 12–14 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F.
- While the chicken cooks, mix the mayonnaise, sweet chili sauce, and Sriracha in a bowl until smooth.
- Once the skewers are done, brush them with melted butter and sprinkle with chopped parsley.
- Drizzle the spicy sweet chili sauce generously over the hot chicken skewers, making sure it coats all sides.
- Serve immediately with extra sauce for dipping. A squeeze of fresh lime on top is optional but highly recommended.
