BBQ Brisket Fried Rice

Ingredients
- 1.5 lbs leftover brisket (substitute any BBQ meat you have on hand)
- 2 bags Jasmine ready rice
- 3-4 green onions, chopped (whites and green tops separated)
- 1-2 tablespoons butter
- ½ cup BBQ sauce
- ¼ cup soy sauce
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- ¼ cup frozen peas
Directions
Set the griddle to low heat.
Add the BBQ meat to the griddle to warm up. Chop it into bite-sized pieces as it heats.
Add butter to the griddle, then add the rice. Pour in about ¼ to ½ cup of water to steam and loosen the rice. Cover and cook for about 2 minutes. Remove the cover, then toss and cook the rice until it is loose and fully heated, about 4-5 minutes.
In a bowl, combine BBQ sauce, soy sauce, garlic paste, and ginger paste. Mix well.
Add the chopped brisket and green onion whites to the rice. Mix well. Then, add the frozen peas.
Pour the sauce over the rice mixture and stir to combine. Cook for an additional 1-2 minutes.
Remove from the griddle, garnish with green onion tops, and enjoy!
