Ingredients
- 2 lbs fresh rice noodles, peeled
- 1 lb top sirloin, thinly sliced
- 2 tbsp oyster sauce
- 1 1/2 tbsp soy sauce
- 1/2 tbsp sugar
- 1/2 tbsp chicken bouillon
- 2 tsp cornstarch
- 1/2 tsp baking soda
- 3 large eggs
- 1 large onion, thickly sliced
- 2 cups bean sprouts
- Green onions, cut into 3-inch pieces
- Cooking oil
- 2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 2 tbsp shaoxing wine
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 tbsp chicken bouillon
- 1/2 tbsp sesame oil
- 1 tsp cornstarch

Marinating the Beef:
In a bowl, marinate the thinly sliced top sirloin with oyster sauce, soy sauce, sugar, chicken bouillon, cornstarch, and baking soda. Mix well and set aside to marinate for 20 minutes.
Preparing the Sauce:
In another bowl, combine the dark soy sauce, regular soy sauce, oyster sauce, shaoxing wine, sugar, chicken bouillon, sesame oil, and cornstarch to create the sauce.
Cooking the Dish:
Heat a well-oiled Blackstone Griddle until hot. Cook the marinated meat on the griddle for 5-6 minutes, then set it aside.
Stir-fry the thickly sliced onions for 1-2 minutes, leaving them slightly crisp.
On the other side of the griddle, add the fresh rice noodles. If needed, steam the noodles with a splash of water by covering them with a cooking dome for 2-3 minutes.
Create a space in the center of the noodles and scramble the 3 eggs. Once the eggs are 80% cooked, toss them together with the noodles, beef, and onions.
Pour the prepared sauce over the noodles and beef, then add the bean sprouts and green onions. Toss everything together over high heat until well combined.
Turn off the heat and serve the Beef Chow Fun while it's hot. Enjoy!
