Betty's Pizza Oven Sheet Pan Clambake

Ingredients
- 12 mussels, cleaned
- 12 littleneck clams, cleaned
- 12 large shrimp, cleaned and deveined
- 6 baby potatoes, cut in half
- 1-2 ears corn, cut into 1-2-inch rounds
- Kielbasa or Italian sausage, cut into ½-inch slices
- 4 garlic cloves, smashed and roughly chopped
- 1 stick unsalted butter
- Old Bay Seasoning, to taste
- ¼ cup flat-leaf parsley leaves, chopped
- 1 lemon, juiced
- 2 lemons, sliced into wedges
- Toasted bread, for serving (Optional)
Directions:
- Place potatoes and corn in a medium saucepot, cover with water and boil for 20 minutes or until corn is cooked and potatoes are fork tender. Drain and set aside.
- Preheat Blackstone pizza oven between 300-400 degrees. Melt butter in a small pot in the pizza oven.
- In a large mixing bowl, combine mussels, clams, shrimp, potatoes, corn, sausage, and garlic.
- Add desired amount of Old Bay Seasoning into melted butter and mix. Start with 1 tablespoon as you can always add more. Pour over seafood mixture and toss to coat evenly.
- Spread seafood mixture onto a 9”x 13” baking tray. Any baking tray with edges or disposable aluminum tray that will fit into the pizza oven will work as well. You can divide this into smaller personal portions if needed.
- Add half of the lemon juice and chopped parsley to the top of the seafood mix. Sprinkle Old Bay Seasoning to taste.
- Place tray into pizza oven and cook until clams and mussels open, shrimp are opaque and cooked through and corn, potatoes and kielbasa are heated. Check every few minutes rotating tray for even cooking.
- Remove tray, garnish with remaining chopped parsley, lemon juice, lemon wedges and Old Bay Seasoning.
Note: Enjoy with crusty bread for dipping, melted butter on the side. Optional add ins: lobster, crab legs, scallops, et cetera.
