Spread a generous layer of Lotus Biscoff Spread over all four tortillas.
Roughly chop one packet of Lotus Biscoff Cream Sandwich Cookies and sprinkle evenly over two of the tortillas. Reserve the remaining cookies for serving.
Add a small handful of mini marshmallows on top of the cookies.
Place the remaining tortillas on top to create two quesadillas.
Melt the butter on the griddle and place the quesadillas onto the cooking surface.
Cook until golden brown on one side, then carefully flip and cook until the second side is golden brown and the marshmallows have melted.
Remove from the griddle and let cool for a minute before slicing.
Cut into wedges and top with additional Lotus Biscoff Spread, the reserved chopped cookies, and extra mini marshmallows if desired.
