Ingredients
- 1 lb bacon, cut into small pieces
- 2 cups onions, diced
- ½ cup brown sugar
- ½ cup apple cider vinegar
- ½ cup pure maple syrup
- ½ cup fresh brewed coffee
- ¼ tsp red pepper flakes
- ¼ tsp garlic powder
Directions
Heat your Blackstone Cast Iron Dish (or a shallow pan) on your griddle to medium heat. Add the bacon and cook until crispy. Remove the bacon and set aside. Remove some of the bacon fat, reserving it for later use, but leave some in the dish.
Add the diced onions to the cast iron dish and toss to coat in the remaining bacon fat. Cook for about 5 minutes until the onions soften and become translucent. Add the red pepper flakes and garlic powder to season, then add the brown sugar and cook for 1 minute.
Return the bacon to the dish, mixing to combine. Add the apple cider vinegar, maple syrup, and coffee. Bring the mixture to a gentle simmer and cook until thickened, about 15-20 minutes.
Remove from heat, allow to cool, and store in an airtight container or jar in the refrigerator for up to 2 weeks. Enjoy bacon jam on burgers, pizza, grilled cheese, biscuits, toast, or with scrambled eggs!
