Preheat the griddle on low. While heating, divide the sausage into 2.5 oz balls.
Cut the bagels in half and set the griddle to medium/high heat in the center.
Cook the sausage patties: Place the sausage balls on the griddle and season with Spicy Brown Sugar seasoning. Smash the patties using parchment paper and cook for 2 minutes on the first side.
Toast the bagels: Add butter to the griddle and toast the bagel halves on both sides for about 2 minutes until golden.
Flip the sausage patties and add a slice of American cheese on each one. Let the cheese melt while the sausage continues cooking.
Cook the eggs: Add more butter to the griddle and crack the eggs onto the surface. Cook until the whites are set, about 2-3 minutes. Season with salt and pepper.
Assemble the sandwiches: Spread mayo on the bottom half of each toasted bagel. Add the sausage patty with melted cheese, a slice of tomato, an egg, and sprinkle everything bagel seasoning on top. Place the top half of the bagel to complete the sandwich.
Optional: Drizzle with hot sauce for extra flavor.
