Ingredients
- Cooking oil
- 2 cups diced onions
- ¼ cup diced green pepper
- ¼ cup diced red pepper
- ¼ cup diced yellow pepper
- 32 oz. diced hash brown potatoes (frozen or fresh)
- 12 oz. pre-cooked diced ham
- 1–2 tsp garlic paste or 2 cloves fresh garlic, minced

Blackstone SPG seasoning
- Fresh flat-leaf parsley, chopped
Directions
- Preheat your Blackstone griddle to medium-high heat.
- Drizzle cooking oil over the griddle surface. Add the onions and peppers, stirring occasionally until they begin to soften.
- Add the potatoes and mix well. Cook until golden and crisp, adding more oil as needed. Push the vegetable mixture to one side of the griddle.
- On the open side of the griddle, add the ham and garlic. Cook until the ham is heated through and the garlic is fragrant.
- Combine everything together on the griddle. Season generously with SPG or your salt, pepper, and garlic blend.
- Remove from the griddle, transfer to a serving dish, and sprinkle with fresh parsley.
- Serve hot and enjoy!
