Parmesan Crusted Chicken Caesar Wraps

Breakfast Quesadilla

Ingredients
- 1 lb thick-cut bacon
- 1 lb breakfast sausage
- 3-4 potatoes, par-cooked in the microwave
- 3-4 eggs
- 2 tablespoons butter
- 8 oz shredded Fiesta Blend cheese (Colby, Monterey Jack, Queso Quesadilla)
- 8 oz Queso Quesadilla cheese
- 3-4 large flour tortillas
- 2 teaspoons Blackstone Essential Blend seasoning
- Avocado or olive oil spray
- Favorite hot sauce (optional)
Directions
- Par cook potatoes by placing them in the microwave and select the potato setting. Select one or two less than the amount you’re using. This will keep the potatoes stiff enough to cut but doesn’t take long to finish on the Blackstone.
- Pre-heat your griddle on a low temperature.
- Start cooking by placing the bacon down first and cooking to your desired doneness. Remove and cut into bite sized pieces.
- Start cooking the sausage and cook till done. Slide to the side.
- Using the bacon and sausage grease, dice up the par cooked potatoes, and lay into the bacon grease. Cook till brown, about 3-5 mins. Season with Essential Blend.
- Adding some butter to the griddle, cook the eggs to your desired doneness. Slide them to a warm spot on the griddle.
- Make the cheese skirt by adding the fiesta blend cheese down into a circle on the griddle top. Not quite the diameter of the tortilla. Cook for 2-3 mins until bubbly and edges are getting crispy.
- Lay the tortillas down onto the cheese and after 1min, flip over and then start building the quesadilla by adding queso quesadilla cheese, eggs, bacon, sausage, potatoes, and then more cheese.
- Fold one side over the other and cook until the tortilla is golden brown on both sides.
- Cut into fours and enjoy!
