Preheat the Blackstone griddle to medium heat. Cook the bacon until crispy, then remove and set aside.
Add a drizzle of oil to the griddle and sauté the onion and tomato until softened and lightly caramelized. Remove and set aside.
Cook the turkey ham slices until warmed through and slightly crisp at the edges. Remove and set aside.
Cook the eggs sunny side up to your preferred doneness.
Spread mayonnaise on the bread and place it mayo-side down on the griddle. Toast until golden and lightly crisp.
Return the turkey ham to the griddle, top with cheese, and let it melt slightly. Add the sautéed onions and tomatoes on top, followed by the crispy bacon.
Assemble the sandwiches: layer the cheesy ham, onions, tomatoes, and bacon onto the toasted bread. Add the sunny-side-up egg on top, drizzle with Tapatío, and finish with the top slice of bread.
