Ingredients
- 8 slices bacon
- Turkey ham slices
- 1 tbsp oil (for sautéing)
- ½ white onion, finely chopped
- 1–2 Roma tomatoes, thinly sliced
- Eggs (1 per sandwich), cooked sunny-side up
- Bread or sandwich buns of choice
- Mayonnaise
- American cheese slices (or any melting cheese)
- Tapatío or preferred hot sauce
Directions
- Preheat the Blackstone griddle to medium heat. Cook the bacon until crispy, then remove and set aside.
- Add a drizzle of oil to the griddle and sauté the onion and tomato until softened and lightly caramelized. Remove and set aside.
- Cook the turkey ham slices until warmed through and slightly crisp at the edges. Remove and set aside.
- Cook the eggs sunny side up to your preferred doneness.
- Spread mayonnaise on the bread and place it mayo-side down on the griddle. Toast until golden and lightly crisp.
- Return the turkey ham to the griddle, top with cheese, and let it melt slightly. Add the sautéed onions and tomatoes on top, followed by the crispy bacon.
- Assemble the sandwiches: layer the cheesy ham, onions, tomatoes, and bacon onto the toasted bread. Add the sunny-side-up egg on top, drizzle with Tapatío, and finish with the top slice of bread.
