Preheat your Blackstone griddle to medium heat. Place the sausage patties on the hot surface and let them cook for about 45 seconds before flipping. Press them down with a hamburger press if you'd like them thinner. Cook for a total of 6–8 minutes or until well-browned and fully cooked through.
Next, add the frozen hash browns to the griddle. Spread them out and let them cook undisturbed so they get crispy. Flip after a few minutes and cook until golden on both sides. Always use frozen hash browns so they don’t fall apart.
While everything cooks, butter the English muffins and place them cut-side down on the griddle. Toast until golden brown, then remove and set aside.
Crack the eggs onto the griddle, using egg rings if you have them. Break the yolks and season with salt, pepper, and a few drops of hot sauce. Cook until fully set, flipping if needed for over-medium style.
Add sliced cheese to the sausage patties during the last minute of cooking and let it melt. You can cover them briefly to help the cheese melt faster.
To make spicy ketchup, mix ketchup with a few drops of hot sauce and some black pepper. Stir and set aside.
To assemble, spread a small amount of spicy ketchup on the bottom half of each muffin. Layer on a sausage patty with melted cheese, a scoop of hash browns, and a cooked egg. Add a few more drops of hot sauce if you like extra heat, then top with the other half of the muffin.
