Ingredients
- 8 eggs
- ¼ cup half and half
- 1 lb ground breakfast sausage
- 8 flour tortillas
- 1 block cheddar cheese, hand-shredded
- Blackstone Lumber Jack Seasoning
- 2 tbsp butter
- ¼ cup fresh cilantro, chopped
- Cholula Chili Garlic Hot Sauce
Directions
- Preheat the griddle to medium-low heat. Add the ground breakfast sausage, breaking it apart as it cooks. Once fully cooked, slide the sausage to the side of the griddle to keep warm.
- While the sausage is cooking, whisk together the eggs and half and half in a mixing bowl. Swirl the butter onto a clean section of the griddle over low heat. Pour the egg mixture onto the griddle and use a spatula or scraper to gently move the eggs around as they scramble. Season with Blackstone Lumber Jack Seasoning. Cook the eggs until almost set, then slide them aside.
- Place the flour tortillas on the griddle. Layer each tortilla with shredded cheese, scrambled eggs, sausage, and another sprinkle of cheese. Add a dusting of Lumber Jack Seasoning on top. Once the bottom of the tortillas are crisped to your liking and the cheese has melted, remove them from the griddle.
- Place the assembled tacos in a Blackstone Taco Rack for family-style serving. Finish with fresh cilantro and a drizzle of Cholula Chili Garlic Hot Sauce.
