Sprinkle the shredded cheese over the mixture and fold until melted and evenly combined.
Lightly oil a clean section of the griddle. Warm the tortillas until soft and pliable, with light brown spots.
Fill each tortilla with the sausage, egg, and cheese mixture. Top with pickled jalapeños and hot salsa, if desired.
