Ingredients
-
8oz package ground sausage
- 1 white onion, diced
-
8oz tri-color peppers, diced
-
1 tsp Blackstone’s SPG seasoning
- 10-12 tortillas, Fajita size
- 4 Eggs
- 4 oz Cheddar jack cheese, shredded
- Avocado Oil
- Chili Sauce, for dipping
- Green onions, garnish

1 tsp Blackstone Lumber jack seasoning
Directions
Preheat your griddle on high. Drizzle avocado oil on the griddle and sauté ground sausage until cooked well done.
On the other side of the griddle on medium high, sauté pepper and onions with lumber jack and SPG seasonings.
Scramble your eggs until almost done, then mix with sausage and veggies mixture.
Prepare to build your taquitos. On a flat surface, lay down the tortilla. Closest to you, add one to two heaping spoonfuls into the tortilla. Sprinkle desired amount of cheese onto the mound and roll the tortilla away from you keeping it tight with each roll until you reach the end if the seam.
To the griddle, add lots of avocado oil to shallow fry the taquitos. Lay the taquitos flap side down. Turn every 1-2 minutes while carefully watching that the tortillas do not burn.
Once all sides of the taquitos are crispy, pull from the griddle onto a plate with paper towels to soak up the excess oil.
Garnish with green onions and a side of chili sauce to dip the taquitos in and enjoy!
