Preheat the griddle to low/medium heat.
Add oil to the griddle and place the Simply Potatoes Chunked Style with Peppers and Onions on it. Cover with a dome and flip every 3-4 minutes until done.
Dice the leftover brisket into small pieces and place them on an open section of the griddle. Cook for 3-4 minutes.
Once the potatoes are done, combine them with the brisket and stir well.
Add a bit of oil to the griddle and cook the eggs.
Stir shredded cheese into the brisket and potato mixture until melted.
Plate the potatoes and brisket, and place the cooked egg on top. Serve and enjoy!
