Brussels Sprouts with Dried Cranberries

Serves 6 Time: 20 minutes Difficulty: Easy


  • 2 (12-ounce) bags brussels sprouts, trimmed and halved
  • ½ cup chicken stock
  • 3 tablespoons unsalted butter
  • 1 yellow onion, diced
  • 1/3 cup dried cranberries
  • 1-2 tablespoons sugar
  • 1-2 tablespoons balsamic vinegar
  • Kosher salt and freshly cracked black pepper, to taste
  • Olive oil, for the griddle


  1. Preheat griddle to medium heat. While griddle is heating up, place brussels sprouts and chicken stock in a microwave safe bowl. Cover, and microwave on high for 3 minutes.
  2. Add olive oil, butter, and diced onions, and microwaved brussels sprouts to the griddle. Season with salt and pepper. Continually stir the sprouts with spatulas until they lightly seared and crispy on the edges.
  3. Add vinegar and sugar to the brussels, adjusting amounts to taste. Add cranberries at the end and cook for an additional 2 minutes.
