Buffalo Blue Cheese Chicken Balls

Serves 6 Time: 30 minutes Difficulty: Easy

Directions

  • 3 pounds ground chicken
  • 3 eggs, beaten
  • 2 cups unseasoned panko breadcrumbs
  • 1/3 cup green onions, sliced
  • 1/3 cup carrots, finely diced
  • 1 celery stalk, finely diced
  • 3 ounces crumbled blue cheese
  • ¼ cup Sweet Baby Ray’s buffalo sauce
  • 1 teaspoon garlic powder
  • Canola oil, for the griddle
  • Ranch dressing, blue cheese dressing and extra buffalo sauce, for serving

Directions

  1. Combine all ingredients in a medium mixing bowl, stir together with a wooden spoon until completely mix. Roll out 30 meatballs.
  2. Preheat Blackstone griddle to medium-high and add vegetable oil. Add meatballs and sear on each side, about 3-4 minutes per side. Steam with a basting dome and drizzle vegetable oil as needed. Cook until all sides are seared, and meatballs are fully cooked.
  3. Serve with ranch, blue cheese, and buffalo sauce.
