Buffalo Blue Cheese Chicken Balls

Directions
- 3 pounds ground chicken
- 3 eggs, beaten
- 2 cups unseasoned panko breadcrumbs
- 1/3 cup green onions, sliced
- 1/3 cup carrots, finely diced
- 1 celery stalk, finely diced
- 3 ounces crumbled blue cheese
- ¼ cup Sweet Baby Ray’s buffalo sauce
- 1 teaspoon garlic powder
- Canola oil, for the griddle
- Ranch dressing, blue cheese dressing and extra buffalo sauce, for serving
Directions
- Combine all ingredients in a medium mixing bowl, stir together with a wooden spoon until completely mix. Roll out 30 meatballs.
- Preheat Blackstone griddle to medium-high and add vegetable oil. Add meatballs and sear on each side, about 3-4 minutes per side. Steam with a basting dome and drizzle vegetable oil as needed. Cook until all sides are seared, and meatballs are fully cooked.
- Serve with ranch, blue cheese, and buffalo sauce.
