1 head cauliflower cut into bite size pieces
1 1/4 cup buttermilk
1/3 cup cornstarch
2/3 cup flour
1 tsp garlic powder
½ tsp paprika
2 tsp chili powder
1 tsp salt
½ tsp pepper
1/3 cup panko bread crumbs
Grapeseed oil spray
For the buffalo sauce:
½ stick butter
1 cup hot sauce (I used Cackalacky© Pepper Sauce)
1 tsp garlic powder
2 tsp honey (optional)
For the ranch:
½ cup mayonnaise
½ cup sour cream
½ cup buttermilk
1 tsp dill
½ tsp parsley
1 tsp chives, chopped
1 tsp paprika
1 tsp onion powder
1 tsp salt
Preheat pellet grill to 425˚.
In a medium bowl, whisk buttermilk, flour, cornstarch, garlic powder, paprika, chili powder, salt and pepper. Fold in cauliflower pieces until they’re well coated. Add panko and stir to combine.
Line a baking sheet with parchment paper and arrange the cauliflower wings in a single layer. Let cook in pellet for 20 minutes. After 20 minutes, flip the cauliflower and spray with grapeseed oil spray and cook for an additional 15 minutes.
In a saucepan add butter, hot sauce, garlic powder, and honey. Allow to simmer for 5 minutes then remove from heat.
Add cauliflower wings to a medium bowl and toss with the buffalo sauce.
Add the coated cauliflower to a preheated air fryer at 425˚ and air fry for 5-8 minutes.
Garnish with chopped chives and serve with ranch dressing, carrots, and celery. Enjoy!
