Ingredients:

For the Bulgogi:
  • 1 pound thin-sliced pork
  • 1/4 cup soy sauce
  • 2 tablespoon brown sugar
  • 2 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon Gochujang (Korean pepper)
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds

For the Pickled Cabbage:
  • 1 head purple cabbage, shredded
  • 1/2 cup water
  • 1/2 cup rice wine vinegar
  • 1 tablespoon kosher salt
  • 2 tablespoons granulated sugar

For the Kimchi Spread:
  • 1 cup Kewpie mayo
  • 2 tablespoons kimchi juice
  • 1/2 cup cabbage kimchi, chopped up
  • 1 teaspoon granulated sugar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 2 green onions, sliced
For the Cucumber Ribbon Kimchi:
  • 1 cucumber, sliced into ribbons
  • 1 yellow onion, chopped
  • 2 1/2 teaspoons kosher salt
  • 3 tablespoons Gochugaru
  • 3 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 1/2 tablespoons granulated sugar
  • 2 cloves garlic, minced
  • 1 teaspoon sesame seeds
For the Sandwich:
  • 2 large hamburger buns
  • Sliced daikon radish
  • Sliced green onions
  • Broccoli Salad
  • Sesame seeds
  • Vegetable oil, for the griddle

Directions:

  1. Combine all of the bulgogi ingredients in a bowl and let sit for 2 hours in the refrigerator.
  2. While the bulgogi is marinating, prepare the Pickled Cabbage. Combine all of the ingredients for the pickled cabbage, except the cabbage, in a medium saucepot. Bring the mixture to a boil. Once it has reached a boil, remove from the heat. Add the shredded cabbage to a bowl and pour the pickle brine over the top. Set aside in the refrigerator until you build the sandwiches.
  3. Combine all the Cucumber Ribbon Kimchi ingredients in a bowl and mix until the cucumbers are well coated. Set aside in the refrigerator until you build the sandwiches.
  4. In a medium mixing bowl, stir together all of the ingredients for the Kimchi Spread. Set aside in the refrigerator until you build the sandwiches.
  5. Once the bulgogi is finished marinating, preheat Blackstone griddle to medium-high heat. Add the bulgogi and cook for 6-8 minutes or until pork is full cooked and well seared. Toast the buns on the griddle. Remove bulgogi and buns from the griddle and gather all of the ingredients to build the sandwiches.
  6. Build the sandwiches in this order: Bottom bun, Kimchi spread, pickled cabbage, daikon, Bulgogi, Cucumber Ribbon Kimchi, broccoli salad, Pickled Cabbage, green onions, sesame seeds, Kimchi Spread, top bun.
