Ingredients
- 1 (8 oz) package pre-sliced Andouille sausage
- 1½ lbs chicken breast, diced
- 16 oz microwavable jasmine or white rice (family-style bag)
- 3 tbsp chicken bouillon seasoning

1 tbsp Cajun seasoning
- 1 sweet onion, diced
- 8 oz pre-chopped tricolor peppers
- 8 oz pre-chopped celery
- ½ stick butter
- 2 tbsp minced garlic
- 2 tsp tomato paste
- 1 tbsp Worcestershire sauce
- 15 oz frozen okra
- ½ cup chopped green onions
Directions
- Preheat your griddle to high heat. Add the diced chicken breast and drizzle with avocado oil. Season with 2 tablespoons of chicken bouillon and 2 tablespoons of Cajun seasoning. Mix well and cook until the chicken is fully cooked through.
- On the other side of the griddle, also on high heat, sauté the peppers, onions, celery, butter, and garlic. Cook, tossing frequently, until the vegetables are al dente.
- Once the chicken and vegetables are cooked, move them to the side of the griddle to keep warm. Reduce the heat to medium-low in the center of the griddle and add the microwavable rice. Squeeze water over the rice to help it steam and warm through.
- Season the rice with Worcestershire sauce, tomato paste, 1 tablespoon of chicken bouillon, and 1 tablespoon of Cajun seasoning. Mix thoroughly.
- Combine the rice and sautéed vegetables. Stir together until well incorporated.
- Increase the heat to medium-high. Add the sliced sausage to the griddle and cook until crispy. Once done, quickly sauté the frozen okra until cooked to your liking.
- Combine the chicken, vegetables, rice, sausage, and okra into one large pile on the griddle. Flatten the mixture and let it cook undisturbed for about 2 minutes to allow the rice to crisp.
- After 2 minutes, toss everything together one final time. Serve hot and garnish with chopped green onions. Enjoy!
