Cajun Fried Rice

1 package Teton Waters Ranch 100% grass fed beef sausage, sliced into coin-sized pieces
1–2 tablespoons oil
1/2 yellow onion, diced
1/2–1 cup bell peppers, diced (any color)
1 tablespoon minced garlic
2 cups cooked jasmine rice (microwavable works great)
1/4–1/3 cup tomato sauce, plus more to taste
1/4 cup water
1 cup frozen peas and carrots
Blackstone Cajun Seasoning, to taste
Green onions, sliced, for garnish

Preheat your griddle or large skillet to high heat. Add oil, then place the sliced sausage on the hot surface and cook until browned and crispy, stirring occasionally.
Add the diced onion, bell peppers, and minced garlic. Cook for about 1–2 minutes, stirring, until the vegetables are softened and slightly caramelized.
Add the cooked rice to the griddle along with the water and tomato sauce. Stir to combine, then add the frozen peas and carrots.
Season with Cajun seasoning, starting light and adding more to taste. Mix well and spread the rice mixture out evenly.
Let the rice sit undisturbed for about 1–1½ minutes to crisp, then flip and stir to combine.
Transfer to a serving bowl, garnish with green onions, and finish with an extra sprinkle of Cajun seasoning if desired. Serve immediately family-style.
