Ingredients
- 1 package Teton Waters Ranch 100% grass fed beef sausage, sliced into coin-sized pieces
- 1–2 tablespoons oil
- 1/2 yellow onion, diced
- 1/2–1 cup bell peppers, diced (any color)
- 1 tablespoon minced garlic
- 2 cups cooked jasmine rice (microwavable works great)
- 1/4–1/3 cup tomato sauce, plus more to taste
- 1/4 cup water
- 1 cup frozen peas and carrots

Blackstone Cajun Seasoning, to taste
- Green onions, sliced, for garnish
Directions
- Preheat your griddle or large skillet to high heat. Add oil, then place the sliced sausage on the hot surface and cook until browned and crispy, stirring occasionally.
- Add the diced onion, bell peppers, and minced garlic. Cook for about 1–2 minutes, stirring, until the vegetables are softened and slightly caramelized.
- Add the cooked rice to the griddle along with the water and tomato sauce. Stir to combine, then add the frozen peas and carrots.
- Season with Cajun seasoning, starting light and adding more to taste. Mix well and spread the rice mixture out evenly.
- Let the rice sit undisturbed for about 1–1½ minutes to crisp, then flip and stir to combine.
- Transfer to a serving bowl, garnish with green onions, and finish with an extra sprinkle of Cajun seasoning if desired. Serve immediately family-style.
