1 yellow onion, diced
1 can chipotle peppers in adobo sauce
Low-sodium soy sauce
Thinly sliced beef bottom round steak, diced
Fresh cilantro, chopped
1 lime
1 orange
1 bulb of garlic
Corn tortillas
Refried beans
Spanish rice
Salt and pepper, to taste
In a blender, combine half the diced onion, the juice of half a lime, the juice of half an orange, half the can of chipotle peppers with adobo sauce, 4 garlic cloves, ¼ cup of low-sodium soy sauce, and a splash of water. Blend until smooth.
Place the diced beef in a bag or bowl, pour the marinade over it, and set aside to marinate.
Heat your griddle to high and drizzle with oil. Add the marinated beef and cook until caramelized and tender, finish with a squeeze of caramelized orange juice.
Mix the remaining diced onion, chopped cilantro, and the juice of the other half of the lime in a bowl. Set aside.
Warm the tortillas and refried beans directly on the griddle. Prepare Spanish rice according to package instructions.
