Slice the Hawaiian rolls horizontally to create a single top layer and a single bottom layer. Add a little butter to the griddle and lightly toast the cut sides of both the top and bottom rolls. Set aside. If your Hawaiian rolls came in a tray, keep it—you can use it as a guide for shaping your burger patty. Form the beef mince into one large patty, slightly larger than the surface area of the rolls. Season the top generously with salt. Place the bacon rashers onto the griddle and cook until crisp, turning once. Remove and set aside. Place the beef patty onto the griddle, seasoned side down. Season the top while it cooks. When ready to flip, turn the patty into the bacon fat left on the griddle for extra flavour. After flipping, layer the patty with slices of burger cheese. Cover with a Blackstone cloche or hood and allow the cheese to melt completely. Carefully transfer the cheesy beef patty onto the bottom layer of the toasted rolls. Chop the cooked bacon and evenly distribute it over the melted cheese—make sure every bite gets bacon. Add the top layer of rolls, pressing gently to set. (You can do this final step on the griddle if desired.) Slice into sliders, serve, and enjoy the compliments.
