Cut the tops off the bread rolls and scoop out some of the inside to create a cavity. Stuff the cavity with shredded cheese blend, then add ¼ cup of ground sausage (or enough to cover the top of the roll). Press the sausage around the edges to secure the cheese and prevent it from melting out.
Heat a griddle over medium-low heat. Place the bread rolls, meat-side down, on the griddle and cook for about 5 minutes to allow the sausage to cook through. Then, flip the rolls over to toast the bread side, keeping the heat on low to give the cheese inside time to melt.
While the rolls cook, add the pepperoni slices to the griddle to crisp up. Once the rolls are toasted and the cheese is melted, spread a layer of pizza sauce on top of the sausage. Add more shredded cheese and the cooked pepperoni slices. Use a dome lid to cover the rolls and melt the cheese. If the heat is too high, place the rolls on a warming rack under the dome to prevent burning.
Once the cheese has melted, plate the rolls and garnish with fresh grated Parmesan, basil, and a drizzle of Mike’s Hot Honey for an extra kick. Enjoy!
