Cook on the Blackstone griddle until fully cooked. Add the jalapeño strips and sliced onion to the griddle. Sauté until softened, then mix them into the chicken. Place a flour tortilla on the griddle and sprinkle a generous layer of cheese over half of it. Add an even layer of the chicken and veggie mixture on top of the cheese. Fold the tortilla in half and cook until golden and crispy on both sides, allowing the cheese to melt. Slice into wedges and serve hot with salsa, sour cream, or guacamole if desired.
