Ingredients
- 2-3 pounds chicken wings
- 1 tablespoon avocado oil
- 2-3 teaspoons kosher salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons cornstarch
- 1 cup Wing Sauce (e.g., Texas Pete wing sauce)
- 1 tablespoon butter
- 2 tablespoons honey
- 2-3 cloves minced garlic
- 1 cup mayo
- 1 cup whole-fat buttermilk
- 1 packet Ranch seasoning mix
- 1/2 cup mayo
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1/2 cup blue cheese
- Dash of Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Directions
In a large bowl, place the chicken wings and add the avocado oil, kosher salt, pepper, garlic powder, onion powder, and paprika. Mix well, then add the cornstarch and mix again.
Preheat a griddle to 325-350 degrees Fahrenheit. Place the seasoned wings in a single layer on the griddle and cover them with a dome to assist with cooking times.
After 3-5 minutes, flip the wings and cook for an additional 3-5 minutes on the other side.
To make the ranch dressing, combine all ranch dressing ingredients in a bowl and mix well. Note that it's even better if prepared in advance, preferably at least 45 minutes before serving.
To prepare the blue cheese dressing, mix all the blue cheese dressing ingredients in a bowl. Like the ranch dressing, this is better if made in advance (at least 45 minutes).
While the wings are still cooking, add the wing sauce, butter, minced garlic, and honey to a pan. Let it simmer and reduce.
When the wings reach an internal temperature of 165 degrees Fahrenheit, they are done. Remove them from the griddle and place them in a large bowl. Add the prepared sauce and toss the wings to coat them evenly.
Plate the wings alongside carrots, celery, and the prepared ranch and blue cheese dressings. Enjoy!
