Ingredients
- 1 lb Mexican chorizo
- 8 corn tortillas
- 2 cups shredded cheese (Oaxaca or mozzarella recommended)
- 1 tbsp Blackstone Street Taco seasoning
- ½ cup diced white onion
- ½ cup chopped cilantro
- ½ cup sour cream
- ½ cup crumbled cotija cheese
- ½ cup salsa of choice (roja or verde)
Directions
- Cook the chorizo on the Blackstone, breaking it up as it browns. Season with Blackstone Street Taco seasoning.
- Once fully cooked, move the chorizo to the side of the griddle to keep warm.
- Sprinkle a layer of cheese directly on the hot griddle and place a tortilla on top. Let the cheese melt and crisp onto the tortilla.
- Add another small handful of cheese on top of the tortilla, then spoon on some of the cooked chorizo.
- Sprinkle with diced onion and chopped cilantro, then top with a second tortilla.
- Allow the bottom tortilla to crisp, then flip the mulita to crisp the other side. Repeat with remaining tortillas and chorizo.
- Serve hot and finish with sour cream, crumbled cotija, and your favorite salsa.
