Ingredients
- 1 lb ground beef (80/20 or lean if preferred)
- 1 yellow onion, diced
- 1 packet taco seasoning
- Chalupa shells
- Hard taco shells
- Shredded Mexican cheese blend
- Sour cream or Greek yogurt (for a lighter option)
- 1 tomato, sliced
- Shredded lettuce
- Hot sauce of your choice
Directions
- Preheat one side of your griddle to high heat. Add the ground beef and diced onion and cook until the beef is fully browned.
- Stir in the taco seasoning with a small splash of water and mix until the meat is evenly coated.
- On the other side of the griddle, set the heat to low and place the chalupa shells and hard taco shells to toast. Flip both after about one minute to prevent burning.
- Sprinkle a handful of shredded cheese on one side of each chalupa shell and cover with a lid or dome for about a minute until the cheese melts.
- Remove the toasted shells from the griddle. Spread a thin layer of sour cream or Greek yogurt on the cheesy side of each chalupa shell to act as the “glue,” then press a hard taco shell into the center so it sticks.
- Spoon about ¼ cup of the seasoned ground beef into each hard taco shell. Top with lettuce, sliced tomato, and hot sauce.
- Serve immediately while warm and enjoy, preferably with a cold margarita.
