Copycat Taco Bell Mexican Pizza

Ingredients
- 1 lb ground beef (80/20)
- 1 package taco seasoning
- 1/2 cup water
- Olive oil
- 6 street taco-sized flour tortillas
- 3 hard taco shells, broken in half
- 1/2 can refried beans
- 1/2 cup taco sauce
- 2 cups shredded Colby Jack cheese
- 1/2 yellow onion, diced
- 1 Roma tomato, diced
- 4 oz can black olives, sliced
- Shredded lettuce
- 2 green onions, sliced
Directions
Preheat the Blackstone griddle to high. Add olive oil, ground beef, and onions. Cook until crispy. Add the taco seasoning and water, stirring until the meat is well-coated.
On the other side of the griddle, add olive oil and crisp the tortillas. Toast the broken hard taco shells until warm on each side.
Remove the ground beef, tortillas, and hard shells from the griddle.
Spread refried beans on 3 tortillas. Add a few heaping tablespoons of beef, then layer with the crunchy taco shells. Top with another tortilla, taco sauce, and shredded cheese.
Return the assembled pizzas to the griddle to melt the cheese. Add water around the pizzas and cover with a lid or dome to help the cheese melt.
Once the cheese is melted, remove from the griddle and add fresh toppings: lettuce, tomatoes, green onions, and black olives. Cut in half and enjoy!
