Directions
Preheat a shallow Dutch oven, pan, or pot to medium-low heat on your griddle surface or directly on your side burners. Melt the butter in the pan.
Add sliced or chopped chipped beef and cook for 1 minute, allowing it to heat through.
Add flour and mix while cooking for 30-60 seconds.
Slowly add milk to the pan, half at a time, while continuing to mix. The milk will slowly thicken as it cooks gently.
Once the mixture has thickened, season with salt and pepper to taste, or use Blackstone Essential or SPG seasoning.
While the mixture thickens, toast bread directly on the griddle surface with butter or mayo spread for a golden crispy toast. At the same time, fry eggs on the griddle over easy or sunny side up.
Ladle creamed chipped beef over the toast and top with eggs and sliced green onions.
Recipe Note
Notes: You can use 2% milk, whole milk, half and half, or heavy whipping cream. The video shows the use of 2% milk.
