Cooking oil
1 lb. ground Italian pork sausage
1 (20-ounce) package refrigerated cheese or spinach and cheese tortellini
5-10 oz. sundried tomatoes
4 oz. tomato paste
Preheat the Blackstone griddle to high heat. Drizzle and spread oil evenly over the griddle surface.
Add the ground sausage to the griddle, stirring occasionally until fully cooked.
Stir in the tortellini with the sausage and cook until the tortellini is lightly browned.
Add the sundried tomatoes, tomato paste, heavy whipping cream, and Parmesan cheese. Mix well and season with salt and pepper. If desired, add yellow or orange grape tomatoes for added color contrast.
Just before finishing, mix in the chopped basil and squeeze in the lemon juice to taste. Stir to combine and remove from the griddle.
Serve and enjoy!
