Heat the griddle to medium heat. Add the chicken and season with Street Taco Seasoning and garlic powder. Cook until browned and fully cooked.
On another section of the griddle, cook the chorizo with the chopped onion until the sausage is fully cooked and the onion is tender.
Combine the chicken and chorizo and keep warm.
Lower the griddle heat and drizzle a small amount of oil onto the surface. Place the corn tortillas on the griddle and sprinkle each with melting cheese.
Spoon the chicken and chorizo mixture over the cheese. Cook until the tortillas are golden and crispy on the bottom and the cheese is melted.
Fold the tortillas into tacos and top with lettuce, sour cream, salsa, and cotija cheese. Serve hot and enjoy.
