Ingredients
- 1 ½ lbs skirt steak, sliced into thin strips
- 1 sweet onion, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red bell pepper, sliced
- 1 taco seasoning packet
- Avocado oil
- Greek yogurt (or sour cream)
- Guacamole
- Shredded lettuce
- 1 lime, cut into wedges
Directions
- Turn your griddle to high heat. Place a cast iron skillet on top so both heat up together until very hot.
- Slice all vegetables and place them in a bowl. Drizzle with avocado oil and sprinkle in half of the taco seasoning. Toss until evenly coated.
- In a separate bowl, combine the sliced skirt steak with the remaining taco seasoning. Mix until all pieces are well coated.
- On the hot griddle, add a drizzle of oil and the seasoned veggies. Sauté for 2–3 minutes without stirring to get a nice sear, then toss and cook for another couple of minutes until slightly softened.
- On the other side of the griddle, spread the steak strips in a single layer so each piece makes full contact with the surface. Cook for 2–3 minutes per side until nicely browned and crisp on the edges.
- Mix the cooked veggies and steak together on the griddle. Let them sit together for 1–2 minutes to meld the flavors.
- Move the fajita mixture to one side of the griddle. Add a splash of water to clean the surface, scraping any bits into the trough. Warm tortillas in the center of the griddle for about 1 minute per side, then transfer them to a plate.
- Once the cast iron skillets are piping hot (a few drops of water should instantly steam), divide the fajita mixture evenly between them.
- Arrange Greek yogurt, guacamole, shredded lettuce, and lime wedges in small bowls for serving.
