Ingredients
- 1 lb mild Italian sausage
- ½ yellow onion, diced
- 8 oz baby spinach
- 16 oz Rigatoni, cooked according to package instructions
- 1 jar Rao’s marinara sauce
- ¼ cup water
- 1-2 cups ricotta cheese
- 8 oz shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup fresh basil, chopped
- Freshly cracked black pepper, to taste
- 2 teaspoons salt
- 2 tablespoons oil, divided

Directions
Cook the rigatoni according to the package instructions. Drain and place in a gallon-sized resealable bag with about 1 tablespoon of oil to prevent sticking.
Preheat the Blackstone griddle on low heat. Add the sausage and diced onions. Add half of the oil to the onions. Cook for 2-3 minutes.
After 2-3 minutes, chop the sausage and add it to the onions. Add the spinach and cook for another 2-3 minutes, stirring occasionally.
Add the pre-cooked noodles to the griddle and mix well.
Pour in the marinara sauce and mix thoroughly. Add ¼ cup of water to the jar, swish it around to get any remaining sauce, and add that to the griddle. Mix for about a minute.
Add the ricotta, mozzarella, and Parmesan cheeses. Stir well for 1-2 minutes until the cheeses are fully combined and melted.
Add the chopped basil, freshly cracked black pepper, and salt. Mix for 30 seconds.
Plate the dish, garnish with additional parsley if desired, and enjoy!
