Deviled Eggs with Candied Bacon

Ingredients
- 5 slices thick-cut bacon
- 3 tablespoons brown sugar
- 1 dozen large eggs
- ¾ cup Dukes Mayonnaise
- 2 teaspoons Dukes Brown Sugar Bourbon Mustard (or substitute regular mustard)
- 1 tablespoon sweet relish
- 2 dashes hot sauce (Tabasco)
- Salt and pepper, to taste
- Chives, sliced

Directions
Preheat air fryer drawers to 300 degrees. Add eggs and cook for 12 minutes.
While the eggs cook, place bacon on low heat on the griddle surface. Allow the bacon to cook slowly, flipping every minute or so, until 80% done. Sprinkle brown sugar over the top of each slice and continue cooking until done. The sugars will caramelize and candy the bacon. Remove the bacon once cooked to desired doneness and allow it to cool. The bacon will harden slightly as it cools. Chop into bite-sized pieces and set aside.
Remove the eggs from the air fryer and immediately submerge them in an ice bath to cool and stop the cooking process. Peel the shells off the eggs and slice the eggs in half, placing the yolks in a mixing bowl and egg whites on a serving platter.
To the yolks, add mayo, mustard, relish, hot sauce, salt, and pepper, and mix until smooth and creamy. Add the mixture to a storage bag for easy piping of your eggs, cutting the tip of the bag off when ready to fill eggs (see video).
Fill eggs, dust with paprika, top with a piece of candied bacon, sprinkle with chives, and enjoy!

Note: You can also use a food processor to mix the egg yolk mixture if desired.
