Ingredients
- 1 loaf sourdough bread
- ½ stick butter
- 2 jalapeños, diced
- 2 green onions (whites and greens separated)
- 1 teaspoon Bacon Up (or substitute bacon grease)
- 8 oz cream cheese, softened (or use whipped cream cheese)
- 8 oz shredded cheddar cheese blend
- ½ pound sliced cheddar cheese
- 2 teaspoons Blackstone Cheddar and Hatch Green Chile seasoning (or substitute similar seasoning)
- 1 loaf sourdough bread
- 2 Granny Smith apples, cut into thin half-moon slices
- 4 slices cheddar cheese
- ½ stick butter

- ½ pound pepperoni
- ½ stick softened butter
- 2 tablespoons parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- ½ pound sliced mozzarella cheese
- 1–2 tablespoons mayonnaise

Directions
Jalapeño Popper Grilled Cheese
- Preheat the griddle to low heat.
- Dice the jalapeños and the green onions, separating the white parts from the green tops.
- Add the Bacon Up (or bacon grease) to the griddle and sauté the diced jalapeños and the white parts of the green onions until softened.
- In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Add the cooked jalapeños and onion whites to the bowl and mix everything thoroughly.
- Spread a thin layer of mayonnaise on one side of each slice of bread. Place a slice of cheddar cheese on the uncoated side of each piece of bread. Spread the jalapeño popper mixture over the cheddar cheese on one slice and top with the other slice of bread, mayo side facing out.
- Butter the griddle generously. Place the sandwiches on the griddle and cook for 2–3 minutes per side, or until golden brown and the cheese is melted. For extra melty cheese, cover the sandwiches with a dome and add a splash of water or a couple of ice cubes under the dome to create steam.
- Slice the grilled cheese sandwiches and serve immediately.
Cheddar and Apple Grilled Cheese
- Preheat the griddle to low heat.
- Slice the apples into thin half-moons.
- (Optional) Spray the griddle with avocado oil or add a small amount of butter. Sauté the apple slices briefly until slightly softened. Remove and set aside.
- Spread a thin layer of mayonnaise on one side of each slice of bread.
- Place a slice of cheddar cheese on the uncoated side of each piece of bread.
- Arrange the apple slices on top of the cheese on one piece of bread. Place the second slice of bread on top, cheese-side down, creating a sandwich.
- Butter the griddle generously. Place the sandwich on the griddle and cook for 2–3 minutes per side, or until the bread is golden brown and the cheese is melted.
- (Optional) For extra melty cheese, cover the sandwich with a dome and add a splash of water or a couple of ice cubes under the dome to create steam.
- Remove the sandwich from the griddle, slice, and enjoy!
Pepperoni Grilled Cheese
- Preheat the griddle to low heat.
- Prepare the griddle butter by mixing the softened butter, parmesan cheese, minced garlic, and chopped parsley in a small bowl.
- Place 4 slices of pepperoni per sandwich on the griddle. After about a minute, flip the pepperoni and lay slices of mozzarella cheese on top to start melting.
- Spread a thin layer of mayonnaise on one side of each slice of bread.
- Assemble the sandwich by placing the melted mozzarella-topped pepperoni onto one slice of bread (mayo side facing out). Add more pepperoni and mozzarella cheese slices if desired.
- Top with a second slice of bread, mayo side facing out.
- Spread the griddle butter on the griddle and let it melt. Place the sandwich on the melted butter and cook until golden brown on one side, about 2–3 minutes.
- Add more griddle butter next to the sandwich, flip the sandwich onto the fresh butter, and cook the other side until golden brown, about 2–3 minutes.
- Remove the sandwich once the bread is toasted and the cheese is melted.
- (Optional) For extra melty cheese, cover the sandwich with a dome and add a splash of water or a couple of ice cubes under the dome to create steam.
