  • 2 Tablespoon of Butter
  • 3 Cups of Corn (4 ears)
  • 1/2 Jalapeno, No Seeds
  • 3 Tablespoons of Mayo
  • 1 Clove Garlic
  • 2 Green Onions
  • 1/2 Bunch of Cilantro
  • 1 Lime
  • 1/4 Cup of Cotija or Feta Cheese
  • Tajin Seasoning (optional)


  1. Remove corn from the cob if using fresh corn.

  2. Heat Blackstone griddle to a medium heat. Melt the butter and add the corn. Toss until cooked and well charred. This takes about 5-10 minutes.

  3. Seed jalapeno and mince. Chop cilantro.

  4. Mix mayo, jalapeno, garlic, green onions, cilantro, lime and cheese together in a bowl. Add the charred corn and toss together until well mixed. Top with Tajin seasoning for extra flavor if desired.

  5. Serve warm or at room temp with whole grain tortilla chips.
