These Better Mac Quesadillas combine all the flavors of a classic burger in a cheesy, crispy quesadilla. With seasoned ground beef, melty cheddar, and a tangy homemade sauce, it’s topped off with shredded iceberg lettuce for a satisfying twist on a favorite.

Whisk together the ketchup, mayonnaise, and relish in a small mixing bowl. Set aside.
Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then add the ground beef and diced onions. Season to taste with salt and pepper.
Cook the beef and onions for 5 minutes or until the onions are translucent and the beef is fully cooked through. Set aside onto a warm section of the griddle.
Layer the cheese on top of the beef and then cover with a basting dome for 1 minute. While the cheese is melting, lay out the tortillas on the griddle.
Use a spoon or heat-safe plastic spatula to spread the sauce on to the tortillas. Use two spatulas to evenly divide the beef and cheese into two tortillas.
Top the meat and cheese with iceberg lettuce and then the other two tortillas. Remove from the griddle and cut each quesadilla into sixths. Serve immediately.
