Combine the avocado and lime in a medium mixing bowl. Smash with a wooden spoon until slightly chunky. Add ¼ of the cilantro and ¼ of the diced onion. Season to taste with salt and pepper and set aside.
Preheat Blackstone griddle to medium-high heat. Drizzle vegetable oil then add the remaining onions and the chopped steak. Season with fajita seasoning, salt, and pepper. Cook for 6-7 minutes until the steak is cooked through and the onions are tender.
Turn the griddle down to low heat then pour the French fries directly onto the griddle top. Top with half of the cheese, then use spatulas to put the steak and onions over the fries.
