This Chicken Lo Mein is a quick and tasty stir-fry loaded with tender chicken, crisp vegetables, and savory noodles. Tossed in a sweet teriyaki sauce with a hint of garlic, it’s the perfect weeknight meal that comes together in just minutes.

1 pound chicken thighs, cubed
1 green bell pepper, sliced
1 yellow onion, sliced
8 ounces brown mushrooms, sliced
1 (16-ounce) bag broccoli slaw
4 cloves garlic, minced
1 (14-ounce) box lo mein noodles, cooked
1 cup teriyaki sauce
⅓ cup brown sugar
Salt and pepper, to taste
Vegetable oil, for the griddle
Sesame seeds, optional
Preheat Blackstone griddle to medium-high heat. Drizzle vegetable oil then add the onion, bell pepper, mushrooms, chicken, and broccoli slaw. Cook for 10-15 minutes until the vegetables are tender and the chicken is fully cooked. Season with salt and pepper.
Add the noodles and garlic to the griddle. Mix and cook for 2 minutes until the garlic is fragrant.
Sprinkle the brown sugar and pour the teriyaki sauce over the top of the lo mein. Stir with spatulas until a sauce is created coating the lo mein. Remove from the griddle and place on a large serving plate. Top with sesame seeds if using. Serve immediately.
