Experience the comfort of chicken pot pie in sandwich form with this delicious recipe. Start by filling a loaf of French bread with a creamy mixture of chicken and vegetables. The result is a handheld version of the classic comfort food that's perfect for a cozy lunch or dinner.

Meat from 1 rotisserie chicken
1 loaf French bread, cut in half
1 (12-ounce) bag peas and carrots
1 yellow onion, diced
12 slices swiss cheese
1 (10.5-ounce) can chicken gravy
8 ounces sour cream
Vegetable oil, for the griddle
Salt and pepper, to taste
Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then add the diced onions, peas, and carrots. Season with salt and pepper and cook for 6-8 minutes.
Add the chicken to the vegetable mixture and cook for 3-4 minutes until fully heated through. Pour the gravy and sour cream over the top then mix with spatulas until a creamy sauce is formed.
Place the French bread onto the griddle to toast for 1-2 minutes. Top the chicken and vegetables with the sliced Swiss cheese and cover with a large basting dome or griddle cover.
Remove the French bread from the griddle and assemble the sandwich. Cut into 4 portions and serve immediately.
